Quick Healthy Dinner Option For Busy People

The other night I came home from a day of training and I was smashed to say the least!

I was also the first one home so it was my turn to cook dinner and needless to say I wasn’t up to doing a big feast that took forever to cook.

I didn’t want to take the easy option and get takeaway but I was hungry and I wanted something that only took a couple of minutes to prepare.

So, what can you whip up in an instant after you’ve had a busy day at work and you are mentally and physically fried?

Simple!

I got out some vegies. You can use whatever you like or whatever you have in the fridge but for this instance, let’s choose broccoli, capsicum and carrots.

It should take only a couple of minutes to wash and chop them all up.

Actually, before you start chopping get out your fry pan and turn on your hotplate. Oil it up and wait for it to heat up.

Now your veggies are chopped you can throw them in all and cook them up for 2 minutes. Be careful not to overcook them. You still want crispy vegetables.

Quick meals don’t have to be boring

I added some honey for a little bit of taste, natural honey of course!

And to finish it off and add some protein, I grabbed a tin of Salmon from the pantry and threw that on top.

All in all, dinner took me less than 5 minutes and it tasted great.

More importantly, it was a quick healthy dinner option that blows the “I don’t have time to eat healthy or cook healthy meals” myth out of the water!
